Mexican Soup Recipe

I think I’m officially ready for Fall already because I’m finding myself craving soups, even if it is still 93 degrees outside. So I’ve mentioned before that I’m a huge fan of Mexican food… we eat it at least once a week. So now I’m combining two of my favorites in one savory dish…

QUICK & EASY MEXICAN SOUP.

  • (2) chicken breasts
  • 1 bag of Spanish ready rice
  • 1 can of corn, drained
  • 1 can of black beans, drained
  • 1 can of cheddar cheese soup
  • 1 can of Mexican stewed tomatoes
  • 1 small can of chopped green chilies
  • 3 cups of water
  • 1 package of fajita seasoning

To make the shredded chicken, I usually put the chicken breasts in the crockpot for 4 hours with 1 cup of water and the fajita seasoning. Cook on high for 4 hours. Then it will easily shred into perfect pieces for the soup.

  2. Add in the corn, black beans, tomatoes, green chilies, 3 cups of water, and rice.
  3. Bring to a high boil, then let simmer for 5 minutes.
  4. Add in the cheddar cheese soup and mix in.

The longest part is waiting for the chicken to cook in the crock pot, but the rest of the recipe goes quite quickly! Great for a quick dinner to pull together after a long day at work, especially if you prepare the chicken the night before.

Wild Berry Cheesecake Rolls

This time of year I often have lots of fresh fruit in the house and try to find new ways to use it before the week’s end. And there’s nothing better than a fruity, sweet dessert in my opinion.

wild berry cheesecake rolls recipeI actually got this idea from my chicken bacon ranch egg roll recipe when I had leftover egg roll wraps from dinner last week. Why not use the egg roll wrappers for something somewhat healthy ;)

  • 2 cups chopped strawberries
  • 2 cups blueberries
  • 8 oz cream cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • egg roll wraps
  • cinnamon sugar
  • nonstick cooking spray

DIRECTIONS:

  1. Preheat over to 375 degrees. Spray cookie sheet with nonstick cooking spray and set aside.
  2. Combine cream cheese, powdered sugar, and vanilla in bowl and whip together.
  3. Scoop about 1 tablespoon of mixture onto egg roll wrap. Next add a small scoop of strawberries and blueberries.
  4. Work the egg roll wrapper as a diamond. Roll the bottom corner up over the ingredients tightly. Next fold the left and right sides over, then finish rolling the wrapper. Use a little bit of water to seal the flap down.
  5. Place egg roll on baking sheet. Spray with nonstick spray and sprinkle with cinnamon sugar.
  6. Bake at 375 for about 10 minutes or until golden brown.
