Mini Cherry Pies

You won't feel guilty having one or two of these mini cherry pies. Great dessert for any occasion.

Ingredients

  • cups flour
  • tsp salt
  • cups butter (cubed)
  • 1 can cherry filling
  • 1 large egg (beaten)
  • ice water
  • white sparkling sugar sprinkles

Instructions

  1. Preheat oven to 350°.

  2. In a large bowl, combine flour, salt and butter. Mush together with your hands until crumbly.

  3. Add ice water slowly just until dough forms into a lightly moist ball.

  4. Knead the dough until it molds together.

  5. Wrap in plastic wrap and chill for 30 minutes.

  6. Take half of the dough ball, place on a floured surface, then flatten out with rolling pin about 1/4 inch thick.

  7. Cut the dough into circles.

  8. Scoop about 1 tablespoon of cherry filling into the middle of a dough circle.

  9. Fold over.

  10. Press over the edges with a fork to seal.

  11. Place on a baking sheet.

  12. Brush the tops of the mini cherry pies with egg and sprinkle with white sparkling sugar sprinkles.

  13. Bake at 350° for 30 minutes or until lightly golden.
