Mexican Chicken

  • lbs boneless, skinless chicken breasts
  • 8 oz cream cheese (softened)
  • 1 can black beans (drained)
  • 1 can corn (drained)
  • 16 oz jar of salsa


  1. Preheat your oven to 350°.

  2. Place your thawed chicken in a 9x13 baking dish and cook uncovered for 20-25 minutes.

  3. Mix cream cheese, corn, salsa and black beans together.

  4. Pour over chicken and cook an additional 10 minutes.

  5. Remove from oven and stir the mixture on top of the chicken so all of the cream cheese smoothes out.
