Let me just preface this with the fact that this stuffed bacon wrapped chicken is probably one of the unhealthiest meals that I cook. BUT I only cook it once a year. That makes it ok, right?
The best thing is that this is a quick and easy recipe that only calls for THREE INGREDIENTS!
- 2lbs of skinless boneless chicken breasts
- Chive and onion cream cheese
- 8 slices of Bacon
Directions:
1. Pound the chicken breasts with a meat tenderizer until 1/2 inch thick.
2. Spread each chicken breast with cream cheese and roll up.
3. Wrap 2 slices of bacon around each roll and secure with toothpicks.
4. Place on a broiler pan and cook for 35 minutes at 375 degrees turning once midway through cooking.
5. Turn oven broiler on and cook the chicken on the top rack for 3-5 minutes per side or until bacon is crispy.
And there you have it! Easy peasy dinner that is restaurant quality for those special occasions!
The recipe I gave you will make about 4-5 servings (depending on the size of the chicken breasts).

Sounds pretty good! I don’t eat cream cheese but might try it without sometime… I want to find a good source for nitrite-free bacon first. I recently became Paleo after 13 years of vegan/vegetarian so I would call this a relatively healthy entree!! And don’t worry, you don’t need to do any cardio to work it off… protein and fat are great! Maybe just lift some weights if you eat a high-carb dessert! 😉

FYI… all foods contain nitrates! One trick is to cook your bacon at a lower temperature which doesn’t activate the nitrate/nitrites in the bacon or any food, keep temp at 350 or lower.

For Adventures in Dressmaking, Trader Joes has nitrite-free bacon and I have recently bought some at Target, I think Applegate Farms brand? I also think spinach would be yummy in this and instead of cream cheese you could use a really good parm or mozz!

Oh wow….I used to make this dish in my early 20’s (about 25 years ago). Of course back then they didn’t have this cream cheese yet. I added green onions in the softened cream cheese. That is the only difference. Haven’t made in a while but it definitely is delicious!!!!
