What’s Cooking: Ranch Dijon Chicken

While this sure ain’t on my diet, I thought I would share it anyway since it’s a family favorite!

Ingredients:

  • 4 boneless chicken breasts
  • 1 cup of Ranch dressing
  • 1/3 cup of Dijon mustard
  • 1/2 cup of butter or margarine
  • 1/3 cup of dry white wine (optional)
  • Angel hair or spaghetti pasta noodles
  • Parsley

Directions:
Whisk together Ranch dressing and mustard. Set aside.

Saute chicken in butter until brown. Remove chicken from skillet but keep the remaining cooked butter in place. Pour wine into skillet and simmer on medium high for one minute. Whisk in Ranch and dijon mustard mixture. Blend well.

Cook noodles as suggested.

Place chicken on a bed of noodles and cover chicken with sauce. Sprinkle with parsley.

Yep, thats it! DELICIOUS dinner for the family. Not that great on your waistline, but totally worth it!

    I changed out the Dijon for Zatarain’s mustard and then added heavy cream to the recipe. It was delightful!
