If you are looking for an amazing sweet for the holidays, then you must try my saltine chocolate toffee recipe!
Now we’re getting into the good stuff on Foodie Friday #foodiefriday… CHRISTMAS SWEETS. One of the things that my Mom has to absolutely, positively make each year is her easy Saltine Chocolate Toffee. Have you ever had this stuff? Trust me, it’s oh-so-good, and very hard to resist!
INGREDIENTS:
- Saltine crackers
- 1 cup light brown sugar
- 1 11oz. package of milk chocolate chips
- 1 cup butter
- Chopped pecans (optional)
DIRECTIONS:
Line a jelly roll pan with foil and spray with non-stick cooling spray. Line with saltine crackers.
On your stovetop, melt the light brown sugar and butter until foamy. Pour over the crackers.
Spread with a large wooden spoon to coat all of the crackers.
Bake in the oven for 7 minutes at 350 degrees. Once removed, immediately sprinkle with chocolate chips. Let the chips soften and melt, then spread with a large baking scraper.
Top with chopped pecans (we always do half since some people don’t like nuts).
Refrigerate the entire jelly roll pan for about 2 hours.
Then break into pieces like peanut brittle.
Just to warn you, this stuff is addictive.
My mom usually has to make about 3 batches to
keep us happy through the Christmas season.
Just make sure you store in an air-tight container.
You don’t want the saltines or toffee getting soft.
