What’s Cooking: Chicken Cheese Puffs

Well now that I’m living with my in-laws for the next 3 months while our house is being built, it’s time to show them my cooking skills. OK, not really.

chicken cheese puffs recipeBut luckily I can act like I know what I’m doing when I download my recipes from Emeals. And here is my latest and greatest: Chicken Cheese Puffs.


  • 1.5lbs of boneless thawed chicken breasts
  • 8oz of cream cheese
  • 1/4 cup of water chestnuts
  • 2 cans of crescent dinner rolls
  • 1 egg white
  • 2 tbsp of butter
  • 1 tbsp of milk
  • salt and pepper
  • 2 cups of corn flakes (optional)

  1. Cut chicken into small cubes and cook until white. Chop into smaller pieces and set aside.
  2. Mix butter and cream cheese until smooth. Add milk. Stir in chicken, water chestnuts, and a dash of salt and pepper.
  3. Unroll crescent roll dough; separate into large rectangles (two of the triangles together, press out perforations to seal).
  4. Spoon 1/2 cup mixture in center of rectangle. Bring four corners to the center of filling. Wrap around any excess. Brush with egg white.
  5. Place on an ungreased cookie sheet and bake at 350 degrees for 20-25 minutes.

chicken cheese puffsNow for an added bit of crunch and flavor, I chop 2 cups of cornflakes and sprinkle on top of the Chicken Cheese Puffs, then cook another 5-7 minutes.

What’s Cooking: Mexican Chicken

I’m always looking for a new chicken recipe, aren’t you? Well my family is kinda obsessed with Mexican and I always have chicken in the freezer, so let me tell you… BEST RECIPE EVER.

5 ingredient mexican chickenMight not look pretty, but OH SO GOOD.


  • 1.5+ lbs boneless chicken breasts
  • 8 oz cream cheese, cubed
  • 1 can black beans, drained
  • 1 can corn, drained
  • 16 oz jar salsa

easy mexican chicken recipePreheat your oven to 350 degrees. Place your thawed chicken in a 13×9 inch baking dish and cook uncovered for 20-25 minutes.

Mix cream cheese, corn, salsa and black beans together. Pour over chicken and cook an additional 10 minutes. Remove from oven and stir the mixture on top of the chicken so all of the cream cheese smoothes out.

mexican chicken recipeI got the recipe from Emeals but adjusted it a tiny bit. The original recipe from Emeals calls for a crock pot, but since I’m a busy mom with a full time job, I wasn’t able to stir it throughout the day. Luckily my oven did a perfect job!
